Cnidoscolus aconitifolius

Cnidoscolus aconitifolius, commonly known as chaya or tree spinach, is a large, fast-growing leafy perennial shrub that is believed to have originated in the Yucatán Peninsula of Mexico. The specific epithet, aconitifolius, means "Aconitum-like leaves". It has succulent stems which exude a milky sap when cut. It can grow to be 6 meters tall, but is usually pruned to about 2 m for easier leaf harvest. It is a popular leaf vegetable in Mexican and Central American cuisines, similar to spinach. The leaves should be cooked before being eaten, as the raw leaves contain a high content of toxic hydrocyanic acid. Up to 5 raw leaves can be eaten a day. To be safely eaten, the required cooking time is 5-15 minutes.

Some varieties have stinging hairs and require gloves for harvesting. Cooking destroys the stinging hairs. Chaya is one of the most productive green vegetables.

Chaya is a good source of protein, vitamins, calcium, and iron; and is also a rich source of antioxidants. However, raw chaya leaves are toxic as they contain a glucoside that can release toxic cyanide. Cooking is essential prior to consumption to inactivate the toxic components; in this chaya is similar to cassava, which also contains toxic hydrocyanic glycosides and must be cooked before being eaten.

Young chaya leaves and the thick, tender stem tips are cut and boiled as a spinach. It is a tasty vegetable, and is exceptionally high in protein, calcium, iron, and vitamin A. In fact, levels of chaya leaf nutrients are two- to threefold greater than any other land-based leafy green vegetable. Chaya leaves have a possible antidiabetic effect.

Traditionally leaves are immersed and simmered for 20 minutes and then served with oil or butter. Cooking for 20 minutes or more will render the leaves safe to eat. The stock or liquid the leaves are cooked in can also safely be consumed as the cyanide is volatilized as hydrogen cyanide (HCN) during cooking. Cooking in aluminum cookware can result in a toxic broth, causing diarrhea.

Celtuce

Celtuce (Lactuca sativa var. asparagina, augustana, or angustata), also called stem lettuce, celery lettuce, asparagus lettuce, or Chinese lettuce, IPA (UK,US) /ˈsɛlt.əs/, is a cultivar of lettuce grown primarily for its thick stem, used as a vegetable. It is especially popular in China, and is called wosun (Chinese: 莴笋; pinyin: wōsǔn) or woju (Chinese: 莴苣; pinyin: wōjù) (although the latter name may also be used to mean lettuce in general).

The stem is usually harvested at a length of around 15–20 cm and a diameter of around 3–4 cm. It is crisp, moist, and mildly flavored, and typically prepared by slicing and then stir frying with more strongly flavored ingredients.

Celosia argentea

Celosia argentea, commonly known as plumed cockscomb, or the silver cock's comb, is a herbaceous plant of tropical origin, and is known for its very bright colors. In India and China it is known as 

As these plants are of tropical origin, they grow best in full sunlight and should be placed in a well drained area. The flowerheads can last up to 8 weeks, and further growth can be promoted by removing dead flowers.

Celosia argentea var. cristata 'Flamingo Feathers' is a cultivar that can grow up to 2 feet in height. The colors are predominantly pink to light violet, and the leaves are a darker green than other cultivars. The Century cultivars are usually taller (1–2 feet), and are bright red, yellow, orange, or pink. The Kimono cultivars are generally smaller (4 inches - 1 foot), and have more muted colors, though similar to the Century cultivars. Other colors, such as white, burgundy, orange-red, etc., can be found. Certain varieties will grow to 3–4 feet in height.Celosia plumosa, also known as Prince of Wales Feathers, is a synonym for Celosia argentea. Often sold as C. plumosa 'Prince of Wales Feathers'. Seeds may be sold as mixtures.

Horticultural usage may be very confusing. For instance Celosia cristata may be listed as a separate species, or a variety of C. argentea. Other names for C. argentea var. plumosa include Celosia argenta var. pyrimidalis and C. spicata.

Celery

Celery (Apium graveolens), a marshland plant variety in the family Apiaceae, has been cultivated as a vegetable since antiquity. Depending on location and cultivar, either its stalks, leaves, or hypocotyl are eaten and used in cooking.

Celery seed is also used as a spice; its extracts are used in medicines.

In North America, commercial production of celery is dominated by the cultivar called 'Pascal' celery. Gardeners can grow a range of cultivars, many of which differ from the wild species, mainly in having stouter leaf stems. They are ranged under two classes, white and red. The stalks grow in tight, straight, parallel bunches, and are typically marketed fresh that way, without roots and just a little green leaf remaining.

The stalks are eaten raw, or as an ingredient in salads, or as a flavoring in soups, stews, and pot roasts.

In Europe, another popular variety is celeriac (also known, incorrectly, as celery root), Apium graveolens var. rapaceum, grown because its hypocotyl forms a large bulb, white on the inside. The bulb could be kept for months in winter and mostly serves as a main ingredient in soup. It can also be ground up and used in salads. The leaves are used as seasoning; the small, fibrous stalks find only marginal use.

The use of celery seed in pills for relieving pain was described by Aulus Cornelius Celsus around AD 30. Celery seeds contain a compound, 3-n-butylphthalide, that has been demonstrated to lower blood pressure in rats.

Celery juice significantly reduced hypertension in 87.5% of patients (14 of 16) tested. Another study showed the same effect on hypertension associated with pregnancy.

Tender shoots or sprouts of germinated celery seeds (Apium), flaxseeds (Linum) and fenugreek (Trigonella), when eaten together, are said to have a cooling effect on the entire body.

Bergapten in the seeds can increase photosensitivity, so the use of essential oil externally in bright sunshine should be avoided. The oil and large doses of seeds should be avoided during pregnancy, as they can act as a uterine stimulant. Seeds intended for cultivation are not suitable for eating as they are often treated with fungicides.

Percentages are roughly approximated using US recommendations for adults.
Celery is used in weight-loss diets, where it provides low-calorie dietary fibre bulk. Celery is often incorrectly thought to be a "negative-calorie food," the digestion of which burns more calories than the body can obtain. In fact, eating celery provides positive net calories, with digestion consuming only a small proportion of the calories taken in.

Spinach

Spinach (Spinacia oleracea) is an edible flowering plant in the family Amaranthaceae native to central and western Asia.

It is an annual plant (rarely biennial), which grows up to 30 cm tall. Spinach may survive over winter in temperate regions. The leaves are alternate, simple, ovate to triangular, and very variable in size from about 2–30 cm long and 1–15 cm broad, with larger leaves at the base of the plant and small leaves higher on the flowering stem. The flowers are inconspicuous, yellow-green, 3–4 mm in diameter, maturing into a small, hard, dry, lumpy fruit cluster 5–10 mm across containing several seeds.

Common spinach, S. oleracea, was long considered to be in the family Chenopodiaceae, but in 2003, that family was merged into the family Amaranthaceae in the order Caryophyllales. Within the family Amaranthaceae sensu lato, Spinach belongs to subfamily Chenopodioideae.

In a 100-g serving providing only 23 calories, spinach has a high nutritional value, especially when fresh, frozen, steamed, or quickly boiled. It is a rich source (20% or more of the Daily Value, DV) of vitamin A, vitamin C, vitamin K, magnesium, manganese, iron and folate (table). Spinach is a good source (10-19% of DV) of the B vitamins riboflavin and vitamin B6, vitamin E, calcium, potassium, and dietary fiber.

The comics and cartoon character Popeye the Sailor Man has been portrayed since 1931 as having a strong affinity for spinach, becoming physically stronger after consuming it. The commonly accepted version of events states this portrayal was based on faulty calculations of the iron content.In this version, German scientist Emil von Wolff misplaced a decimal point in an 1870 measurement of spinach's iron content, leading to an iron value ten times higher than it should have been, and this faulty measurement was not noticed until the 1930s. This caused the popular misconception that spinach is exceedingly high in iron that makes the body stronger.

Criminologist Mike Sutton wrote an article in the Internet Journal of Criminology, claiming the Popeye and iron link is just another long-standing myth, and spinach was chosen and promoted in Popeye for its vitamin A content alone. In the cited article, he also disputes the above — what he calls the 'Spinach Popeye Iron Decimal Error Story (SPIDES)' — due to lack of verifiable sources, although he found a different reference from 1934 reporting 20 times the actual iron content. In another article, Sutton distinguishes between the myth of spinach's iron content, which he blames on "bad science", and the myth that the error was caused by a misplaced decimal point.

Sour cabbage

Sour cabbage, A vegetable, which is popular in the Serbian and the Bulgarian cuisine, similar to sauerkraut, with the difference that it is prepared through the lacto-fermentation of whole heads of cabbage (Brassica Oleracea var.capitata), not separate leaves or grated mass. No vinegar or boiling is required. In Serbia and Bulgaria it is commonly home made conserve and many families in their cellars or other suitable places have big barrels (20–200 liter) that they fill every autumn with cabbages to make this traditional food.

The cabbage heads are salted (after the external leaves and core have been removed), packed into the barrel as densely as possible (another reason why round form is required) and covered with salted water (4–6% of salt). A heavy load (a rock, for example) is placed above, to keep them under the water, in anaerobic conditions. From time to time the water has to be reversed (flushed from the bottom of the barrel and than again sluiced onto the top), adding somewhat (but, always with salt) if necessary. A higher salinity makes the fermentation slower, while an insufficient salinity makes it unsafe. Higher temperatures require a higher salinity. The fermentation should be done at 16-22 °C. The best temperature is 18-20 °C. A cabbage fermented at a lower temperature has a better fragrance. The best known microorganisms involved in the process include Leuconostoc mesenteroides, Lactobacterium brevis, Streptococcus faecalis, Pediococcus cerevisiae and Lactobacterium plantarum.

The sour cabbage is very popular Bulgarian and Serbian food, consumed mainly during the winter half of the year, both raw or cooked. As raw, it is a very popular winter salad, served usually dusted with pepper powder (aleva paprika) and/or black pepper (but, also just as is). In cooking it is used for sarma in the first place, but, for other dishes too.

Nutritional qualities are very similar to those of sauerkraut. The liquid (brine) from the barrel the sour cabbage has been fermented in, called rasol (or raso), is one of the best natural dietary supplements. It is traditionally used as a hangover remedy, but, its qualities far exceed that purpose. It is extremely rich in Vitamin C, but also in vitamins E, K, B complex as well as in very rare vitamin U. It's also rich in oligoelements (Ca, K, P, S, Fe, Cu, Zn, Mg), enzymes and lactic acid.


Portulaca oleracea

Portulaca oleracea (common purslane, also known as verdolaga, pigweed, little hogweed, red root, pursley, and moss rose) is an annual succulent in the family Portulacaceae, which may reach 40 centimetres (16 in) in height.

Approximately forty cultivars are currently grown.

Widely used in East Mediterranean countries, archaeobotanical finds are common at many prehistoric sites. In historic contexts, seeds have been retrieved from a protogeometric layer in Kastanas, as well as from the Samian Heraion dating to seventh century BC. In the fourth century BC, Theophrastus names purslane, andrákhne (ἀνδράχνη), as one of the several summer pot herbs that must be sown in April (H.P 7.12). As Portulaca it figures in the long list of comestibles enjoyed by the Milanese given by Bonvesin de la Riva in his "Marvels of Milan" (1288).

In antiquity, its healing properties were thought so reliable that Pliny the Elder advised wearing the plant as an amulet to expel all evil (Natural History 20.120).

A common plant in parts of India, purslane is known as sanhti, punarva, paruppu keerai, or kulfa.

When stressed by low availability of water, purslane, which has evolved in hot and dry environments, switches to photosynthesis using Crassulacean acid metabolism (the CAM pathway): At night its leaves trap carbon dioxide, which is converted into malic acid (the souring principle of apples), and, in the day, the malic acid is converted into glucose. When harvested in the early morning, the leaves have ten times the malic acid content as when harvested in the late afternoon, and thus have a significantly more tangy taste.

Chemical constituents include noradrenaline, calcium salts, dopamine, L-DOPA, malic acid, citric acid, glutamic acid, asparagic acid, nicotinic acid, alanine, glucose, fructose, and sucrose.

Betacyanins isolated from Portulaca oleracea improved cognition deficits in aged mice. A subclass of homoisoflavonoids from the plant showed in vitro cytotoxic activities towards four human cancer cell lines.

Purslane also finds mention in a translation of the Bible as a repulsive food. Job's question in Job 6:6 is translated in the Revised Standard Version as, "Can that which is tasteless be eaten without salt or is there any taste in the slime of the purslane?".  to be a mistranslation of mallow, however.
The name verdolaga, associated with the plant that grows in South America, is a nickname for football clubs with green-white schemes in their uniforms, such as Colombia's Atletico Nacional and Argentina's Ferrocarril Oeste.

Sorrel

Common sorrel or garden sorrel (Rumex acetosa), often simply called sorrel, is a perennial herb in the family Polygonaceae. Other names for sorrel include spinach dock and narrow-leaved dock. It is a common plant in grassland habitats and is cultivated as a garden herb or leaf vegetable (pot herb).

Sorrel is a slender herbaceous perennial plant about 60 centimetres (24 in) high, with roots that run deep into the ground, as well as juicy stems and edible, arrow-shaped (sagittate) leaves. The leaves, when consumed raw, have a sour taste. The lower leaves are 7 to 15 centimetres (2.8 to 5.9 in) in length with long petioles and a membranous ocrea formed of fused, sheathing stipules. The upper ones are sessile, and frequently become crimson. It has whorled spikes of reddish-green flowers, which bloom in early summer, becoming purplish. The species is dioecious, with stamens and pistils on different plants

The leaves are eaten by the larvae of several species of Lepidoptera (butterfly and moth) including the blood-vein moth.

Common sorrel has been cultivated for centuries. The leaves may be puréed in soups and sauces or added to salads; they have a flavour that is similar to kiwifruit or sour wild strawberries. The plant's sharp taste is due to oxalic acid, which is mildly toxic.

In northern Nigeria, sorrel is known as yakuwa or sure (pronounced suuray) in Hausa or karassu in Kanuri. It is also used in stews usually in addition to spinach. In some Hausa communities, it is steamed and made into salad using kuli-kuli (traditional roasted peanut cakes with oil extracted), salt, pepper, onion and tomatoes. The recipe varies according to different levels of household income. A drink called zobo (sorrel squash) is made from a decoction of the plant calyx.

Hypochaeris radicata

Hypochaeris radicata (sometimes spelled Hypochoeris radicata), also know
 as catsear, flatweed,cat's-ear, hairy cat's ear or false dandelion, is a perennial, low-lying edible herb often found in lawns. The plant is native to Europe, but has also been introduced to the Americas, Japan, Australia and New Zealand where it can be an invasive weed. It is listed as a noxious weed in Washington State, in the northwestern United States.

Catsear is derived from the words cat's ear, and refers to the shape and fine hair on the leaves resembling that of the ear of a cat.

The plant is also known as "false dandelion," as it is commonly mistaken for true dandelions. Both plants carry similar flowers which form windborne seeds. However, catsear flowering stems are forked and solid, whereas dandelions possess unforked stems that are hollow. Both plants have a rosette of leaves and a central taproot. The leaves of dandelions are jagged in appearance, whereas those of catsear are more lobe-shaped and hairy. Both plants have similar uses.

All parts of the catsear plant are edible; however, the leaves and roots are those most often harvested. The leaves are bland in taste but can be eaten raw in salads, steamed, or used in stir-fries. Older leaves can become tough and fibrous, but younger leaves are suitable for consumption. In contrast to the edible leaves of dandelion, catsear leaves only rarely have some bitterness. In Crete, Greece, the leaves of a variety called pachies (παχιές) or agrioradika (αγριοράδικα) are eaten boiled or cooked in steam by the locals.

The root can be roasted and ground to form a coffee substitute.
This species is suspected of causing stringhalt in horses if consumed in excess.

Chard

Chard (Beta vulgaris subsp. vulgaris, Cicla-Group and Flavescens-Group) is a leafy green vegetable often used in Mediterranean cooking. In the Flavescens-Group-cultivars, the leaf stalks are large and are often prepared separately from the leaf blade.The leaf blade can be green or reddish in color; the leaf stalks also vary in color, usually white, yellow, or red. Chard has highly nutritious leaves making it a popular addition to healthful diets (like other green leafy vegetables). Chard has been around for centuries, but because of its similarity to other beets and some other vegetables such as cardoon, the common names used by cooks over the centuries can be quite confusing.

The word "chard" descends from the fourteenth-century French carde, from Latin carduus meaning artichoke thistle (or cardoon, including the artichoke).

The origin of the adjective "Swiss" is unclear, since the Mediterranean plant is not native to Switzerland, nor particularly commonly cultivated there. Some attribute the name to it having been first described by a Swiss botanist, either Gaspard Bauhin  or Karl Heinrich Emil Koch (although the latter was German, not Swiss).

Chard is a biennial. Clusters of chard seeds are usually sown, in the Northern Hemisphere, between June and October, depending on the desired harvesting period. Chard can be harvested while the leaves are young and tender, or after maturity when they are larger and have slightly tougher stems. Harvesting is a continuous process, as most species of chard produce three or more crops. Raw chard is extremely perishable.

Fresh young chard can be used raw in salads. Mature chard leaves and stalks are typically cooked (like in pizzoccheri) or sauteed; their bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach.

In Egyptian cuisine, chard is commonly cooked with taro root and coriander in a light broth.In Turkish cuisine, chard is cooked as soup, sarma or börek.

In a 100 gram serving, raw Swiss chard provides 19 calories and has rich content (> 19% of the Daily Value, DV) of vitamins A, K, and C, with 122%, 1038%, and 50%, respectively, of the DV. Also having significant content in raw chard are vitamin E and the dietary minerals, magnesium, manganese, iron and potassium.Carbohydrates, protein, fat and dietary fiber have low content.

When chard is cooked by boiling, vitamin and mineral contents are reduced compared to raw chard, but still supply significant proportions of the DV (table).

Cabbage

Cabbage or headed cabbage (comprising several cultivars of Brassica oleracea) is a leafy green or purple biennial plant, grown as an annual vegetable crop for its dense-leaved heads. It is descended from the wild cabbage, B. oleracea var. oleracea, and is closely related to broccoli and cauliflower (var. botrytis), brussels sprouts (var. gemmmifera) and savoy cabbage (var. sabauda). Cabbage heads generally range from 0.5 to 4 kilograms (1 to 9 lb), and can be green, purple and white. Smooth-leafed firm-headed green cabbages are the most common, with smooth-leafed red and crinkle-leafed savoy cabbages of both colors seen more rarely. It is a multi-layered vegetable. Under conditions of long sunlit days such as are found at high northern latitudes in summer, cabbages can grow much larger. Some records are discussed at the end of the history section.
فَبِأَيِّ آلاءِ رَبِّكُمَا تُكَذبٰن It is difficult to trace the exact history of cabbage, but it was most likely domesticated somewhere in Europe before 1000 BC, although savoys were not developed until the 16th century. By the Middle Ages, it had become a prominent part of European cuisine. Cabbage heads are generally picked during the first year of the plant's life cycle, but plants intended for seed are allowed to grow a second year, and must be kept separated from other cole crops to prevent cross-pollination. Cabbage is prone to several nutrient deficiencies, as well as to multiple pests, and bacterial and fungal diseases.

The Food and Agriculture Organization of the United Nations (FAO) reports that world production of cabbage and other brassicas for 2011 was almost 69 million metric tons (68 million long tons; 75 million short tons). Almost half of these crops were grown in China, where Chinese cabbage is the most popular Brassica vegetable. Cabbages are prepared in many different ways for eating. They can be pickled, fermented for dishes such as sauerkraut, steamed, stewed, sautéed, braised, or eaten raw. Cabbage is a good source of vitamin K, vitamin C and dietary fiber. Contaminated cabbage has been linked to cases of food-borne illness in humans.

Cabbage is an excellent source of vitamin C and vitamin K, containing more than 20% of the Daily Value (DV) for each of these nutrients per serving (right table of USDA nutrient values).[Cabbage is also a good source (10–19% DV) of vitamin B6 and folate, with no other nutrients having significant content per 100 gram serving (table).

Basic research on cabbage phytochemicals is ongoing to discern if certain cabbage compounds may affect health or have anti-disease effects. Such compounds include sulforaphane and other glucosinolates which may stimulate the production of detoxifying enzymes during metabolism. Studies suggest that cruciferous vegetables, including cabbage, may have protective effects against colon cancer.

Purple cabbage contains anthocyanins which are under preliminary research for potential anti-carcinogenic properties. Cabbage is also a source of indole-3-carbinol, a chemical under basic research for its possible properties.

In addition to its usual purpose as an edible vegetable, cabbage has been used historically as a medicinal herb for a variety of purported health benefits. The Ancient Greeks recommended consuming the vegetable as a laxative, and used cabbage juice as an antidote for mushroom poisoning, for eye salves, and for liniments used to help bruises heal. In Cato the Elder's work De Agri Cultura ("On Agriculture"), he suggested that women could prevent diseases by bathing in urine obtained from those who had frequently eaten cabbage. The ancient Roman nobleman Pliny the Elder described both culinary and medicinal properties of the vegetable, recommending it for drunkenness—both preventatively to counter the effects of alcohol, and to cure hangovers. Similarly, the Ancient Egyptians ate cooked cabbage at the beginning of meals to reduce the intoxicating effects of wine. This traditional usage persisted in European literature until the mid-20th century.

The cooling properties of the leaves were used in Britain as a treatment for trench foot in World War I, and as compresses for ulcers and breast abscesses. Accumulated scientific evidence corroborates that cabbage leaf treatment can reduce the pain and hardness of engorged breasts, and increase the duration of breast feeding. Other medicinal uses recorded in Europe folk medicine include treatments for rheumatism, sore throat, hoarseness, colic, and melancholy. In the United States, cabbage has been used as a hangover cure, to treat abscesses, to prevent sunstroke, or to cool body parts affected by fevers. The leaves have also been used to soothe sore feet and, when tied around the neck of children, to relieve croup. Both mashed cabbage and cabbage juice have been used in poultices to remove boils and treat warts, pneumonia, appendicitis, and ulcers.

Tatsoi

Tatsoi (Brassica rapa subsp. narinosa or Brassica rapa var. rosularis) is an Asian variety of Brassica rapa grown for greens. This plant has become popular in North American cuisine as well, and is now grown throughout the world.

The name comes from Mandarin (in Chinese: 塌棵菜). It is also called 'Chinese flat cabbage', 'rosette pakchoi' or 'broadbeaked mustard', 'spoon mustard', or 'spinach mustard'. Variations of the name tatsoi include 'tat soi', 'tat choy'.

The plant has dark green spoon-shaped leaves which form a thick rosette. It has a soft creamy texture and has a subtle yet distinctive flavour.

It can be grown to harvestable size in 45–50 days, and can withstand temperatures down to –10°C (15°F). Tatsoi can be harvested even from under the snow.

Tatsoi contains high levels of vitamin C, carotenoids, folic acid, calcium and potassium.

Brussels sprout

The Brussels sprout is a member of the Gemmifera Group of cabbages (Brassica oleracea), grown for its edible buds.

The leafy green vegetables are typically 2.5–4 cm (0.98–1.6 in) in diameter and look like miniature cabbages. The Brussels sprout has long been popular in Brussels, Belgium, and may have originated and gained its name there.

Raw Brussels sprouts contain excellent levels of vitamin C and vitamin K, with more moderate amounts of B vitamins, such as folic acid and vitamin B6 (USDA nutrient table, right); essential minerals and dietary fibre exist in lesser amounts (table).

Brussels sprouts, as with broccoli and other brassicas, contain sulforaphane, a phytochemical under basic research for its potential anticancer properties. Although boiling reduces the level of sulforaphane, steaming and stir frying do not result in significant loss.

Consuming Brussels sprouts in excess may not be suitable for patients taking anticoagulants such as warfarin since they contain vitamin K, a blood-clotting factor. In one such reported incident, eating too many Brussels sprouts may have countered blood-thinning therapy.

The most common method of preparing Brussels sprouts for cooking begins with cutting the buds off the stalk. Any surplus stem is cut away, and any loose surface leaves are peeled and discarded. Once cut and cleaned, the buds are typically cooked by boiling, steaming, stir frying, grilling, or roasting. To ensure even cooking throughout, buds of a similar size are usually chosen. Some cooks will make a single cut or a cross in the center of the stem to aid the penetration of heat. Brussels sprouts can be pickled as an alternative to cooking.

Overcooking will render the buds gray and soft, and they then develop a strong flavour and odour that some dislike. The odour is associated with the glucosinolate sinigrin, an organic compound that contains sulfur: hence the strong smell. For taste, roasting Brussels sprouts is a common way to cook them to bring out flavour. Common toppings or additions for Brussels sprouts include Parmesan cheese and butter, balsamic vinegar, apple cider vinegar, bacon, pistachios, pine nuts, mustard, brown sugar, and pepper. Another popular way of cooking Brussels sprouts is to sauté them.

Turnip

The turnip or white turnip (Brassica rapa subsp. rapa) is a root vegetable
commonly grown in temperate climates worldwide for its white, bulbous taproot.,
Shaljam, شلجم  

Small, tender varieties are grown for human consumption, while larger varieties are grown as feed for livestock.

In the north of England and Scotland, and eastern Canada (Newfoundland), turnip (or neep; the word turnip is an old compound of tur- as in turned/rounded on a lathe and neep, derived from Latin napus) refers to the larger, yellow rutabaga root vegetable, also known as the "swede" (from "Swedish turnip").

There is evidence that the turnip was domesticated before the 15th century BC; it was grown in India at this time for its oil-bearing seeds. The turnip was a well-established crop in Hellenistic and Roman times, which leads to the assumption that it was brought into cultivation earlier. Sappho, a Greek poet from the 7th century BC, calls one of her paramours Gongýla, "turnip". Zohary and Hopf note, however, "there are almost no archaeological records available" to help determine its earlier history and domestication. Wild forms of the hot turnip and its relatives the mustards and radishes are found over west Asia and Europe, suggesting their domestication took place somewhere in that area. However Zohary and Hopf conclude, "Suggestions as to the origins of these plants are necessarily based on linguistic considerations."

The turnip's root is high in vitamin C. The green leaves of the turnip top ("turnip greens") are a good source of vitamin A, folate, vitamin C, vitamin K and calcium. Turnip greens are high in lutein (8.5 mg / 100 g).

Like rutabaga, turnip contains bitter cyanoglucosides that release small amounts of cyanide. Sensitivity to the bitterness of these cyanoglucosides is controlled by a paired gene. Subjects who have inherited two copies of the "sensitive" gene find turnips twice as bitter as those who have two "insensitive" genes, and thus may find turnips and other cyanoglucoside-containing foods intolerably bitter.

In the United States, stewed turnips are eaten as a root vegetable in the autumn and winter. The greens of the turnip are harvested and eaten all year. Turnip greens may be cooked with a ham hock or piece of fat pork meat, the juice produced in the stewing process prized as pot liquor. Stewed turnip greens are often eaten with vinegar.

In the Tyrolean Alps of Austria, raw shredded turnip-root is served in a chilled remoulade in the absence of other fresh greens as a winter salad.

In the Friuli region of Italy, a popular side dish, called Brovada, is made of shredded turnip marinated in red grape pomace.

In Iran, boiled turnip-roots (with salt) are a common household remedy for cough and cold.

In the Punjab and Kashmir regions of India and Pakistan turnips are used in variety of dishes, most notably shab-daig.

In Brazil, turnips (nabos) are traditionally regarded as distasteful, or at least somewhat disagreeable and unpleasant at the first bite or taste. Part of this bias reportedly stems from the Middle Ages, where, for the reason of being inexpensive, turnips became in Iberia (and thus in Iberian-descended cultures) associated with the poor, and avoided in the diet of the nobility.

The turnip is an old vegetable charge in heraldry. It was used by Leonhard von Keutschach, prince-archbishop of Salzburg. The turnip is still the heart shield in the arms of Keutschach am See.

Broccolini

Broccolini (original Japanese: ブロッコリーニ) is a green vegetable similar to
broccoli but with smaller florets and longer, thin stalks. Often misidentified as young broccoli, it is a hybrid of broccoli and kai-lan, both cultivar groups of Brassica oleracea. It was originally developed by the Sakata Seed Company of Yokohama, Japan, in 1993 as "aspabroc".

The entire vegetable is consumable, including the occasional yellow flower. Common cooking methods include sauteeing, steaming, boiling, and stir frying. Its flavor is sweet, with notes of both broccoli and asparagus, although it is not closely related to the latter. Nutritionally, it is high in vitamin C and contains vitamin A, calcium, folate, and iron.

In Australia, Broccolini is a registered trademark licensed to Perfection Fresh Australia by the Sakata Seed Company.

In Japan, it is highly popular as a spring vegetable, and usually eaten steamed.

In Brazil, the common form of the word broccoli ("brócolis") refers to broccolini: the more traditional broccoli is called "brócolis americano" (American broccoli).

The International Federation for Produce Standards assigns it the price look-up code 3277, "baby broccoli". It is also known as asparation, asparations, bimi, broccoletti, broccolette and tenderstem. Sanbon Incorporated originated a commercial program for "asparation" (its registered trademark) in Mexico in 1994 and took it to the US market in 1996; Mann's took it to the US market in 1998 under its trademarked name, Broccolini®. It is grown near the central California coast during the spring, summer, and fall seasons and Yuma, Arizona throughout the winter. It is sold throughout the United States, Canada, Australia and the United Kingdom. In the United Kingdom and Ireland it is referred to as "tenderstem broccoli".

Watercress

Watercress is an aquatic plant species with the botanical name Nasturtium
officinale. This should not be confused with the quite different group of plants with the common name of nasturtium, botanical name Tropaeolum.

Watercress is a rapidly growing, aquatic or semi-aquatic, perennial plant native to Europe and Asia, and one of the oldest known leaf vegetables consumed by humans. It is currently a member of the family Brassicaceae, botanically related to garden cress, mustard, radish and wasabi—all noteworthy for their piquant flavor.

The hollow stems of watercress are floating, and the leaves are pinnately compound. Small, white and green flowers are produced in clusters and are frequently visited by insects, especially hoverflies such as Eristalis flies.

A 100-gram serving of watercress provides 11 calories and is particularly rich in vitamin K (table). It also contains significant amounts of vitamin A, vitamin C, riboflavin, vitamin B6, calcium, manganese, and folate (table). Watercress has low contents of carbohydrates, protein, fat and dietary fiber (table).

Watercress crops grown in the presence of manure can be a haven for parasites such as the liver fluke Fasciola hepatica. Watercress is a known inhibitor of the cytochrome P450 CYP2E1, which may result in altered drug metabolism for individuals on certain medications such as chlorzoxazone.

Borage

Borage,] Borago officinalis), also known as a starflower, is an annual herb in
the flowering plant family Boraginaceae. It is native to the Mediterranean region and has naturalized in many other locales. It grows satisfactorily in gardens in the UK climate, remaining in the garden from year to year by self-seeding. The leaves are edible and the plant is grown in gardens for that purpose in some parts of Europe. The plant is also commercially cultivated for borage seed oil extracted from its seeds.

Traditionally, Borago officinalis has been used in hyperactive gastrointestinal, respiratory and cardiovascular disorders, such as gastrointestinal (colic, cramps, diarrhea), airways (asthma, bronchitis), cardiovascular, (cardiotonic, antihypertensive and blood purifier), urinary (diuretic and kidney/bladder disorders).

Naturopathic practitioners use borage for regulation of metabolism and the hormonal system, and consider it to be a good remedy for PMS and menopause symptoms such as the hot flash.[dubious – discuss] The flowers can be prepared in infusion.

One case of status epilepticus has been reported that was associated with borage oil ingestion.

A methanol extract of borage has shown strong amoebicidal activity in vitro. The 50% inhibitory concentration (LD50) of the extract against Entamoeba histolytica was 33 µg/mL.

Francis Bacon thought that borage had "an excellent spirit to repress the fuliginous vapour of dusky melancholie." John Gerard's Herball mentions an old verse concerning the plant: "Ego Borago, Gaudia semper ago (I, Borage, bring always courage)". He states that "Those of our time do use the flowers in sallads to exhilerate and make the mind glad. There be also many things made of these used everywhere for the comfort of the heart, for the driving away of sorrow and increasing the joy of the minde. The leaves and floures of Borage put into wine make men and women glad and merry and drive away all sadnesse, dulnesse and melancholy, as Dios corides and Pliny affirme. Syrup made of the floures of Borage comforteth the heart, purgeth melancholy and quieteth the phrenticke and lunaticke person. The leaves eaten raw ingender good bloud, especially in those that have been lately sicke."

Borage is used in companion planting. It is said to protect or nurse legumes, spinach, brassicas, and even strawberries. It is also said to be a good companion plant to tomatoes because it confuses the mother moths of tomato hornworms or manduca looking for a place to lay their eggs. Claims that it improves tomato growth and makes them taste better remain unsubstantiated.

Ipomoea aquatica

Ipomoea aquatica is a semiaquatic, tropical plant grown as a vegetable for its
tender shoots and leaves. It is found throughout the tropical and subtropical regions of the world, although it is not known where it originated. This plant is known in English as water spinach, river spinach, water morning glory, water convolvulus, or by the more ambiguous names Chinese spinach, Chinese Watercress, Chinese convolvulus, swamp cabbage or kangkong in Southeast Asia. Occasionally, it has also been mistakenly called "kale" in English, although kale is a strain of mustard belonging to the species Brassica oleracea and is completely unrelated to water spinach, which is a species of morning glory. It is known as phak bung in Thai and Laotian, ong choy in Cantonese, kongxincai (空心菜) in Mandarin Chinese, rau muống in Vietnamese, kangkong in Tagalog, ကန်စွန်း, gazun in Myanmar, trokuon (ត្រកួន) in Khmer, kolmou xak in Assamese, kalmi saag in Hindi, kalmi shak in Bengali, Thooti Koora in Telugu, kangkung in Indonesian, Malay and Sinhalese and hayoyo in Ghana. In Suriname (South-America) it's known as dagoeblad or dagublad.

The vegetable is a common ingredient in Southeast Asian dishes. stir-fried water spinach is a popular vegetable dish in Southeast Asia. In Singapore, Indonesia, and Malaysia, the tender shoots along with the leaves are usually stir-fried with chili pepper, garlic, ginger, dried shrimp paste (belacan/terasi) and other spices. In Penang and Ipoh, it is cooked with cuttlefish and a sweet and spicy sauce. Also known as eng cai in the Hokkien dialect, it can also be boiled with preserved cuttlefish, then rinsed and mixed with spicy rojak paste to become jiu hu eng cai. Boiled eng cai also can be served with fermented krill noodle belacan bee hoon and prawn noodle.

In Indonesian cuisine it is called kangkung, boiled or blanched together with other vegetables it forms the ingredient of gado-gado or pecel salads in peanut sauce. Some recipes that use kangkung is plecing kangkung from Lombok, and mie kangkung (kangkong noodle) from Jakarta.

If harvested from contaminated areas, and eaten raw, I. aquatica may transmit Fasciolopsis buski, an intestinal fluke parasite of humans and pigs, causing fasciolopsiasis.

In Philippine basketball, kangkong used as a slang generally by the Filipino basketball fans of the Philippine Basketball Association which refers to the league's team, Barangay Ginebra San Miguel, due to their championship drought since they won their last championship during 2008 PBA Fiesta Conference.

Chinese cabbage

Chinese cabbage (Brassica rapa, subspecies pekinensis and chinensis) can
refer to two groups of Chinese leaf vegetables often used in Chinese cuisine: the Pekinensis Group (napa cabbage) and the Chinensis Group (bok choy).

These vegetables are both variant cultivars or subspecies of the turnip and belong to the same genus as such Western staples as cabbage, broccoli, and cauliflower. Both have many variations in name, spelling, and scientific classification, especially the bok choy (B. rapa chinensis) variety.

There are two distinctly different groups of Brassica rapa used as leaf vegetables in China, and a wide range of varieties within these two groups. The binomial name B. campestris is also used.

This group is the more common of the two, especially outside Asia; names such as napa cabbage, dà báicài (Chinese: 大白菜, lit. "large white vegetable"); Baguio petsay or petsay wombok (Tagalog); Chinese white cabbage; "wong a pak" (Hokkien, Fujianese); baechu (Hangul: 배추), wongbok and hakusai (Japanese: 白菜 or ハクサイ) usually refer to members of this group. Pekinensis cabbages have broad green leaves with white petioles, tightly wrapped in a cylindrical formation and usually forming a compact head. As the group name indicates, this is particularly popular in northern China around Beijing (Peking).,

Wheatgrass

Wheatgrass is a food prepared from the cotyledons of the common wheat plant,
Triticum aestivum (subspecies of the family Poaceae). It is sold either as a juice or powder concentrate. Wheatgrass differs from wheat malt in that it is served freeze-dried or fresh, while wheat malt is convectively dried. Wheatgrass is allowed to grow longer than malt. Like most plants, it contains chlorophyll, amino acids, minerals, vitamins, and enzymes. Claims about the health benefits of wheatgrass range from providing supplemental nutrition to having unique curative properties, though few, if any, have been scientifically proven. It is often available in juice bars, and some consumers grow and juice wheatgrass in their homes. It is available as fresh produce, tablets, frozen juice and powder. Wheatgrass is also available commercially as a spray, cream, gel, massage lotion, and a liquid herbal supplement. Because wheatgrass juice is extracted from wheatgrass sprouts, i.e., before the wheat seed begins to form, it is gluten-free

Wheatgrass is a good source of potassium, a very good source of dietary fiber, vitamin A, vitamin C, vitamin E (alpha tocopherol), vitamin K, thiamin, riboflavin, niacin, vitamin B6, pantothenic acid, iron, zinc, copper, manganese and selenium, and has a negligible amount of protein (less than one gram per 28 grams). Adding other foods with complementary amino acid profiles to this food may yield a more complete protein source and improve the quality of some types of restrictive diets.

Wheatgrass proponent Charles Schnabel claimed in the 1940s that "fifteen pounds of wheatgrass is equal in overall nutritional value to 350 pounds of ordinary garden vegetables", a ratio of 1:23. Despite claims of vitamin and mineral content disproportional to other vegetables, the nutrient content of wheatgrass juice is roughly equivalent to that of dark leafy vegetables (see table 1).

Contrary to popular belief, vitamin B12 is not contained within wheat grass or any vegetable; rather it is a byproduct of the microorganisms living on plants. Some analyses of B12 content in wheatgrass has confirmed that it contains negligible amounts of the compound even though the source of this analysis remains unclear. The USDA National Nutrient Database reports that wheatgrass contains no vitamin B12. Because vitamin B12 is not made by plants, any of this vitamin would have to be produced by bacteria found in the preparation.

Beetroot

The beetroot is the taproot portion of the beet plant, usually known in North
America as the beet, also table beet, garden beet, red beet, or golden beet. It is one of several of the cultivated varieties of Beta vulgaris grown for their edible taproots and their leaves (called beet greens). These varieties have been classified as B. vulgaris subsp. vulgaris Conditiva Group.

Other than as a food, beets have use as a food colouring and as a medicinal plant. Many beet products are made from other Beta vulgaris varieties, particularly sugar beet.

The usually deep purple roots of beetroot are eaten either boiled, roasted or raw, either alone or combined with any salad vegetable. A large proportion of the commercial production is processed into boiled and sterilized beets or into pickles. In Eastern Europe, beet soup, such as borscht, is a popular dish. In Indian cuisine, chopped, cooked, spiced beet is a common side dish. Yellow-coloured beetroots are grown on a very small scale for home consumption.

The green, leafy portion of the beet is also edible. It is most commonly served boiled or steamed, in which case it has a taste and texture similar to spinach. Those greens selected should be from bulbs that are unmarked, instead of those with overly limp leaves or wrinkled skins, both of which are signs of dehydration. The domestication of beets can be traced to the emergence of an allele which enables biennial harvesting of leaves and taproot.

Beetroot can be: boiled or steamed, peeled and then eaten warm with or without butter as a delicacy; cooked, pickled, and then eaten cold as a condiment; or peeled, shredded raw, and then eaten as a salad. Pickled beets are a traditional food in many countries.

A traditional Pennsylvania Dutch dish is pickled beet egg. Hard-boiled eggs are refrigerated in the liquid left over from pickling beets and allowed to marinate until the eggs turn a deep pink-red colour.

In Poland and Ukraine, beet is combined with horseradish to form popular ćwikła, which is traditionally used with cold cuts and sandwiches, but often also added to a meal consisting of meat and potatoes. The same in Serbia where the popular cvekla is used as winter salad, seasoned with salt and vinegar, with meat dishes. As an addition to horseradish it is also used to produce the "red" variety of chrain, a popular condiment in Ashkenazi Jewish, Polish, Russian and Ukrainian cuisine.

Popular in Australian hamburgers, beetroot is combined with fried egg (as well as the usual beef patty and salad) to make an Aussie burger.

When beet juice is used, it is most stable in foods with a low water content, such as frozen novelties and fruit fillings. Betanins, obtained from the roots, are used industrially as red food colourants, e.g. to intensify the colour of tomato paste, sauces, desserts, jams and jellies, ice cream, sweets, and breakfast cereals.

Beetroot can also be used to make wine.

Food shortages in Europe following World War I caused great hardships, including cases of mangelwurzel disease, as relief workers called it. It was symptomatic of eating only beets.

Achillea millefolium

Achillea millefolium, commonly known as yarrow /ˈjæroʊ/ or common yarrow,
is a flowering plant in the family Asteraceae. It is native to temperate regions of the Northern Hemisphere in Asia, Europe, and North America. It has been introduced as a feed for live stock in places like New Zealand and Australia. However, it is a weed in those places and sometimes also in its native regions.

In New Mexico and southern Colorado, it is called plumajillo (Spanish for 'little feather') from its leaf shape and texture. In antiquity, yarrow was known as herbal militaris, for its use in stanching the flow of blood from wounds. Other common names for this species include gordaldo, nosebleed plant, old man's pepper, devil's nettle, sanguinary, milfoil, soldier's woundwort, thousand-leaf, and thousand-seal.

Yarrow has also been used as a food or in teas, and was very popular as a vegetable in the 17th century. The younger leaves are said to be a pleasant leaf vegetable when cooked like spinach, or in a soup. Yarrow is sweet with a slight bitter taste. The leaves can also be dried and used as an herb in cooking.

In the Middle Ages, yarrow was part of an herbal mixture known as gruit used in the flavoring of beer prior to the use of hops. The flowers and leaves are used in making some liquors and bitters.

Eruca sativa

Eruca sativa, is an edible annual plant, commonly known as salad rocket,
rucola, rucoli, rugula, colewort, roquette, and arugula.

It is sometimes conflated with Diplotaxis tenuifolia, known as perennial wall rocket, another plant of the Brassicaceae family that is used in the same manner. Eruca sativa, which is widely popular as a salad vegetable, is a species of Eruca native to the Mediterranean region, from Morocco and Portugal in the west to Syria, Lebanon and Turkey in the east. The Latin adjective sativa in the plant's binomial is derived from satum, the supine of the verb sero, meaning "to sow", indicating that the seeds of the plant were sown in gardens. Eruca sativa differs from E. vesicaria in having early deciduous sepals. Some botanists consider it a subspecies of Eruca vesicaria: E. vesicaria subsp. sativa. Still others do not differentiate between the two.

Other common names include garden rocket, or more simply rocket (British, Australian, South African, Irish and New Zealand English), and eruca.The English common name, rocket, derives from the French roquette, a diminutive of the Latin word eruca, which designated an unspecified plant in the Brassicaceae family (probably a type of cabbage). Arugula, the common name now widespread in the United States, entered American English from non-standard (dialect) Italian. (The standard Italian word is rucola, a diminutive of the Latin "eruca"). The Oxford English Dictionary dates the first appearance of "arugula" in American English to a 1960 New York Times article by food editor and prolific cookbook writer Craig Claiborne.

Eruca sativa grows 20–100 centimetres (8–39 in) in height. The leaves are deeply pinnately lobed with four to ten small lateral lobes and a large terminal lobe. The flowers are 2–4 cm (0.8–1.6 in) in diameter, arranged in a corymb in typical Brassicaceae fashion; with creamy white petals veined with purple, and with yellow stamens; the sepals are shed soon after the flower opens. The fruit is a siliqua (pod) 12–35 millimetres (0.5–1.4 in) long with an apical beak, and containing several seeds (which are edible). The species has a chromosome number of 2n = 22.

In Italy, raw rocket is often added to pizzas just before the baking period ends or immediately afterwards, so that it will not wilt in the heat. It is also used cooked in Apulia, in Southern Italy, to make the pasta dish cavatiéddi, "in which large amounts of coarsely chopped rocket are added to pasta seasoned with a homemade reduced tomato sauce and pecorino", as well as in "many unpretentious recipes in which it is added, chopped, to sauces and cooked dishes" or in a sauce (made by frying it in olive oil and garlic) used a condiment for cold meats and fish. In the Slovenian Littoral, it is often combined with boiled potatoes, used in a soup, or served with the cheese burek, especially in the town of Koper. It is also used with salad, tomatoes and mozzarella cheese. In Rome, Italy rucola is used with special meat dish called straccietti that are thin slices of beef with raw rocket and Parmesan cheese.

A sweet, peppery digestive alcohol called rucolino is made from rocket on the island of Ischia in the Gulf of Naples. This liqueur is a local specialty enjoyed in small quantities following a meal in the same way as a limoncello or grappa.

In Brazil, where its use is widespread, rocket is eaten raw in salads. A popular combination is rocket mixed with mozzarella cheese (normally made out of buffalo milk) and sun-dried tomatoes.

In Cyprus, the plant is used in salads and omelets. An omelet with arugula (Greek rokka) is common in Cypriot restaurants.

In Egypt, the plant is commonly eaten raw as a side dish with many meals, with ful medames for breakfast, and regularly accompanies local seafood dishes.

In Turkey, similarly, the rocket is eaten raw as a side dish / salad with fish, but is additionally with a sauce of extra virgin olive oil and lemon juice.

In West Asia and Northern India, Eruca seeds are pressed to make taramira oil, used in pickling and (after aging to remove acridity) as a salad or cooking oil. The seed cake is also used as animal feed.
